Anthony is a listener to the Plant-Based TourGuide podcast and was kind enough to reach out to send a message supporting the podcast and we started talking and once it was figured out that Anthony had a very cool story himself, well, I definitely wanted him on the show! Anthony had been overweight practically his entire life, starting in childhood and discusses his "breakthrough moment" and when he decided to make changes and how switching to a Plant Based - Vegan Eating regimen helped him accomplish his goals then and still to this day.

Here is her recipe for Vegan Mozarella she was kind enough to share: 1/3 Cup Raw Cashews (Soaked for about 4 hours in water) 1 Cup Water (filtered suggested) 3 heaping teaspoons potato starch (can use tapioca starch also) 1 tablespoon nutritional yeast 1 teaspoon apple cider vinegar 1 teaspoon salt Blend all ingredients together in a blender. She talks about great plant based meals for kids, great "go to" meals for when you're having company over for dinner and they aren't plant based eaters and you want to prepare them a great plant based meal that will appeal to their tastebuds. She does remind us that with the depletion of many of the nutrients in our soil over the years of factory farming, we have to be mindful to find ways to ensure that we are getting all the nutrient levels that we need (you'll be amazed when she tells you how many servings of fruits and veggies we really need every day to reach optimal levels due to the lowered amount in today's fruits and veggies versus a generation ago) so she talks about ways to do this including an incredible product called JuicePlus.
