In part three of my pizza nerd-cast with Adam Kuban and Scott Wiener, we go seriously deep into New York pizza, specifically the state of the NYC slice in 2018. Scott observed that some of the best pizza in town is being made by a new generation of pizza makers, ones that have no connection with older pizzerias. As he puts it, "They're not someone who learned their recipe from somebody else. They're people who are taking it upon themselves to figure out how to do it and do it right." When I mentioned that the quality of some of the old-school slice joints had become markedly worse, Adam reluctantly agreed. "That's tough 'cause I came here from Oregon...and we had no slice culture. The first six months I was here, I probably ate a slice everyday, 'cause I could," Adam said. "But eventually I burned out on it, and then...the next time I ate a slice again, I was like 'What did I think was so good about this? This is like rubbery cheese.'"
